Cinnamon Bread

Cinnamon bread

I remember as a kid what a treat it was when mom would bring home a loaf of cinnamon bread from the store.  It was usually commercially made and had raisins in it, which I don't like, but I suffered through for some cinnamon toast goodness.  It's pretty easy to make your own cinnamon bread, but this recipe is my favorite. I found it in an older than me home keeping magazine a few years ago.  Somethings just stand the test of time. Cinnamon Bread Print Prep time: 3 hours Cook time: 30 mins Total time: 3 hours 30 mins Serves: 2 loaves Ingredients Basic Sweet Dough 1 package active dry yeast (2 1/4 teaspoons) 5 3/4 to 6 1/4 cups all purpose flour 2 1/4 cups milk 1/3 cup sugar 1/4 cup palm shortening (or coconut oil) 2 teaspoons salt Cinnamon filling: 1/4 cup sugar 1 1/2 teaspoons cinnamon Instructions In large mixer bowl combine yeast and 2 1/2 cups of flour. Bananas Foster French Toast

OLYMPUS DIGITAL CAMERA

French toast is a quick and easy breakfast option and this recipe makes for a special breakfast meal.  I've seen a few French toast recipes that call for briefly frying and then baking the toast, which supposedly gives the French toast a less mushy inside and a nice crisp outside.  It works!  The  frying and then baking makes for some terrific toast. Even if you don't want to bother with the bananas foster topping, try the rest of the recipe and bake the toast.  It's amazing! This was a big hit with even the pickiest eaters in our house.  I don't much care for warm bananas and even I liked it. Bananas Foster French Toast Print Prep time: 5 mins Cook time: 20 mins Total time: 25 mins Serves: 4-6 Ingredients 4 large eggs 1 cup milk 2 teaspoons vanilla A pinch of salt 1 teaspoon cinnamon 1/2 teaspoon allspice 12 thick slices of Challah or brioche bread 4 Tablespoons butter 1/4 cup sugar 2 bananas, sliced 1/4 teaspoon … [Read more...]

Easy Dinner Rolls

Dinne rolls

This is my favorite dinner roll recipe and I've been making it for years.  The rolls are light and buttery and a perfect addition to any meal. Homemade English Muffins

English Muff

I've never been a big fan of English muffins. I went through a phase in my early 20s where I ate them instead of bagels (less calories, I think), but I didn't like it. My husband, however, loves English muffins. I am happy to buy them for him, but they are expensive and it's hard to find an organic version. I looked in to making them, but every recipe I saw called for English muffin rings and I just didn't see the point in buying something I could only use for one thing (well, I could use them for hamburger buns, too). I was pretty excited when I found this recipe -- no rings and basic ingredients. English muffins are "baked" on the stove top in a frying pan or skillet. They are super simple to make, but they take some time so don't start them if you are in a hurry. They taste absolutely nothing like the store bought brand. They are much better! Banana Bread

Banana Bread

I made some banana bread last week and I couldn't believe that I haven't shared this recipe yet! I have tried many, many banana bread recipes. They were all OK, but nothing spectacular.  This banana bread recipe, however, is perfect.  The bread turns out moist, sweet and banana-y.  My friend, Kim, always brings this banana bread to our cookie exchange in December and it's a huge hit. The original recipe calls for buttermilk (as written below), but you can substitute plain milk or I've even made it with plain yogurt as a substitute. This week I made this recipe with 1 3/4 cups of all purpose flour and 3/4 cup white whole wheat flour and I couldn't tell a difference. Banana Bread Print Prep time: 10 mins Cook time: 1 hour Total time: 1 hour 10 mins Serves: 1-4 loaves Ingredients 1 1/4 cups sugar 1/2 cup butter, softened 2 eggs 1 1/2 cups mashed bananas 1/2 cup buttermilk 1 teaspoon vanilla 2 1/2 cups flour 1 teaspoon baking soda 1 … [Read more...]

Cream Biscuits

biscuits

Have any heavy cream leftover  from making some homemade truffles?  This is biscuit recipe is a great way to use up some leftover heavy cream, but it's also a great reason to buy heavy cream if you don't have any.  This recipe is hands down the easiest and best way to get light, fluffy biscuits.  And any biscuit recipe that doesn't require cutting in butter is a winner in my book.   Cream Biscuits Print Prep time: 10 mins Cook time: 15 mins Total time: 25 mins Serves: 12 Ingredients 2 cups all-purpose flour 1 teaspoon salt 1 Tablespoon baking powder 2 teaspoons sugar 1 to 1 1/2 cups heavy cream 1/3 cup (5 1/3 Tablespoons) butter, melted Instructions Preheat oven to 425 degrees. Never Fail Bread

OLYMPUS DIGITAL CAMERA

I have been making my own bread for about 4 years.  I use a variety of different methods and have tried a lot of recipes for all kinds of bread. When I saw this recipe for white bread, I was intrigued by the unique method used to form the dough in to loaves after the first rise.  I've done this type of folding dough, but usually the technique is used to get a flaky result (like in scones or pastries).  This bread was so incredibly good!  It is, however, on the sweet side.  The next time I make it, I'll cut the sugar down to just a few tablespoons and increase the salt to a tablespoon or more. Flour amounts for bread can vary.  I only used 5 cups of flour when I made this bread.  The goal is to get a nice ball of dough that is tacky, but not overly sticky so you can't work with it.  The stickier the dough, the more tender the baked bread.  I try to leave my bread dough as wet as I can stand it. Also, don't worry too much about the water temperature.  You just don't want … [Read more...]

Garlic Pull Apart Bread

Garlic bread

This recipe was an "ah ha" moment for me.  I like to serve garlic bread with dinner, but my homemade bread is usually round boule type loaves and not the long french loaves garlic bread is made with.  So I usually just served plain old boring sliced bread.  But this recipe allows me to use my homemade round loaves and get some super yummy (and really fun) garlic bread.  I've served this several times and it's always a big hit. Mini-Cinnamon Rolls

OLYMPUS DIGITAL CAMERA

There are those mornings when all I want is a cinnamon roll. Now.  I don't want to wait the 2-3 hours of rising and baking that a "normal" yeast roll would take.  These little guys are perfect for a quick cinnamon roll fix.  They are actually more biscuit rolls than true yeast cinnamon rolls, but they do in a pinch.  Plus they are "mini", which means they make a great breakfast side dish. Mini-Cinnamon Rolls Print Recipe type: Breakfast Author: http://www.canyoustayfordinner.com Prep time: 10 mins Cook time: 15 mins Total time: 25 mins Serves: 24 Ingredients 1 cup flour 1 teaspoon baking powder 1/4 teaspoon salt 3/4 cup heavy cream 2/3 cup brown sugar (or sucanat) 1 1/4 teaspoon cinnamon 3 Tablespoons butter, at room temperature Glaze: Powdered sugar Milk Vanilla or almond extract Instructions Preheat oven to 400 degrees.
