This tropical smoothie recipe is made with mango, pineapple, banana and uses coconut milk for a delicious and healthy start to your day. Now that we are no longer eating toast or cereal for breakfast, smoothies have become my stand by for a quick, easy and delicious breakfast.  It took a while for my kids to get on board with drinking their breakfast, but they now request a smoothie in the morning.  While I mostly stick to strawberry and banana for the kids, I wanted something a little different to start the morning and the coconut milk was begging to be used in a tropical smoothie. I already had a huge bag of frozen mango from Costco in my freezer. Irish cream is a decadent adult beverage that I often enjoy in my coffee or use to make milk shakes with a kick.  But store bought Irish cream is expensive whereas this homemade version is very affordable. I use homemade chocolate syrup to make it even more frugal. I don't like much alcohol, but Irish cream is one of the few exceptions.  Unfortunately, it's also pretty expensive so I rarely had it around.  A few years ago I ran across a recipe for homemade Irish cream and it turns out to be super easy to make. I looked at a lot of recipes and they are all virtually the same. Most call for whiskey, but I opted for vodka because that's what I have on hand. You can make your own sweetened condensed milk, if you don't have any in your pantry.  I've also made this before use a can of evaporated milk.  I just dissolved 1/2 cup sugar in the evaporated milk and called it good. With St. Patrick's Day just around the corner, I have Irish cream on the brain.   My homemade Irish cream is a favorite adult beverage, but I wanted something the kids could enjoy, too. One of my favorite flavors is Irish cream and every March, I find myself trying to find fun ways to incorporate in to pretty much everything.  I'm not really in to dying food green, but Irish cream I can get behind! A few years ago I made my first batch of homemade Irish cream, which is basically a homemade version of Bailey's.  It's so good, but it does contain alcohol so it isn't for the whole family. I wanted to make the recipe in to an Irish Cream coffee creamer so the kids could enjoy a little Irish cream for St. Patrick's Day, too.    I'm a major coffee drinker of all kinds like cardamom coffee and iced coffee. I love holiday baking! I did a lot of baking during the holidays before we had kids and now that the kids are old enough to "help" me bake, it's even more fun.  I like to bake the standards, like cut out sugar cookies, but I also enjoy mixing it up every year with something new.
