Weekly Menu Plan, February 12

This is one of the busiest weeks of the year for us (February is always like that!).  We have Valentine's Day on Tuesday and my husband's birthday on Friday (and it's a BIG ONE!) all topped with high school basketball play-offs every night except one.   I'm thinking about making cupcakes to take up to the band kids on Friday as a special treat for my husband's birthday and for all the hard work they're putting in this week supporting their teams. In addition to regular meals, I have a list of freezer cooking for the week.  The plan is to make and freeze: bread; banana bread; breakfast burritos; pudding pops; chicken rice bake; chicken spaghetti; chili verde; and cookie dough.  That's quite an ambitious list for me. I'll be happy to get even some of it accomplished.  Some of these are new recipes, which I will share if they turn out well.  We're going to a fundraiser for dinner on Wednesday so I'm thinking that may be the best day to do cook. It's almost 9:30 PM on Sunday night and I think I've put off menu planning long enough.  Truth be told, I despise making a menu. The mental logistics of figuring out what to eat when...and to top it off, I have a terrible stomach ache and I'm tired from staying up most of last night with a sick 3 year old.  But, I know that I can do mental gymnastics now or stress out later this week trying to figure out what to have for dinner. Monday: Amish Baked Chicken, green beans or corn, mashed potatoes (maybe?), biscuits (maybe?) Finally... the end of January!  This weekend my mom and I agreed that January always seems to drag but the rest of the year just flies on by.   February is always a super busy month for us and it is always booked solid so while I'm happy January is almost over, I know March will be here before I know it!  Meanwhile, I need to get a menu together for this week. It's been a very cold and wet weekend. In fact, we have an 80% chance of rain on Monday!  But it should warm up as the week progresses so I'm planning warm comfort food at the beginning of the week and hoping to grill by the end.  I didn't get to the mushroom soup last week, but I'm hoping to get to it this week along with some snack foods (like a new granola bar recipe!).  Meanwhile, here's what's for dinner this week: Monday:  Enchiladas (I will get to these!) We have a long weekend this weekend, which means my entire week gets thrown off because Monday is still the "weekend".  We spent our weekend painting (thank, cheap mis-tinted paint) and organizing (thank you, dad, for the shelving) our garage. We've been in some state of re-organizing that area since we moved in 3 years ago and I think... I think, we're done.  The biggest challenge left is finding room for all the bikes! There is just NO ROOM for them! Off on another week we go! I used up all of the chicken stock I had in the freezer so I planned ahead and am making whole chicken(s) this week so I can get stocked back up  (ha ha).  I need to think about doing some baking. I made bread last week and froze it, but we're out of muffins and scones in the freezer so I may try to do a couple double batches this week. I  had a thought this week to try and serve two veggies at every dinner.  I'm thinking one green veggie and then another color.  Hopefully planning it out on the menu will help make that a reality. I have spent the past 5 years trying to figure out how to have fresh, homemade cinnamon rolls on Christmas morning.  As a kid, we ate the cinnamon rolls out of the tube, which, frankly, is much more convenient even if less appetizing.  Every single recipe I have for cinnamon rolls takes a good two hours to make with all the rising.  I've tried refrigerating overnight to rise, but that never seems to work.  I could get up at 3 AM to start them, but I don't want the rolls THAT much!  This dilemma may be the bane of my Christmas existence for the rest of my life. I'm OK with that, though, because I have a lot of other really yummy options for Christmas breakfast!    They are a festive red and oh so delicious! Super simple and quick!   This is the last week of school -- hooray! It is also a crazy week as we have some sort of obligation every single night this week.  But after Friday night, we are pretty free and clear through Christmas.  Phew.  I'm trying some fun new recipes this week, which may be a little insane considering our commitments, but I'm feeling adventurous.  I'm also planning to try out a few fun treats to post and I really hope they all turn out!
