It's hard to believe that this is the last full week of May.  Memorial Day and then Summer are quickly headed our way and I can't wait! We have a very busy summer ahead of us, including family visits here in Las Vegas and some time spent back on the East coast with more family.  We're heading to a cook out at my sister's house for Memorial Day and I'm planning try a few new recipes -- baked beans and tres leches cake.   I tried baked beans once and I burnt them.  We'll see if I fare better this time. I have a few new recipes on the menu this week.  Here's hoping they turn out so I can share them! Weekly Menu, May 14

Phew! What a weekend!  We made a quick trip to Six Flags Magic Mountain in California with my parents and my husband's high school band.  It was fun and crazy.  Nothing like 12 hours in a car for 4 hours at an amusement park.  We made it back in time to celebrate Mother's Day with my mom.  She and my dad are heading back to Michigan today so it's a sad day around here. This week is much saner than last.  I had a hard time sticking to my menu because our dinner times were just all over the place.  But I did mostly keep with it and was happy that I did.  I am changing up the menu this week because I have an abundance of chicken in the freezer that I want to use up.   This is a super busy week for us as my husband's high school performing arts department gears up to compete in a festival in California this weekend.   There are rehearsals and concerts every night this week!  It's a crazy life sometimes. Here's what is on the menu for the week from my monthly menu plan.  I may change the taco salad to some kind of chicken salad because I bought baby spinach this week for our leafy green option.   I also found another shrimp recipe that sounds really delicious so I may cook that instead of the etouffe.   This is what I love about a menu plan -- it's flexible!   Well, April has come and gone and I missed more than half of it being sick.  I didn't cook for two weeks straight and didn't feel inspired to be creative. I finally made it home from the hospital -- after an unplanned, five day stay.  I'm still trying to wrap my head around the fact that I'm going to lose most of April to rest and healing.   And am I ever glad that I started monthly menu planning because I'm not exactly in any shape to try and organize meals.  My husband is a good cook as long as he has a plan and directions and the monthly menu provides both! We have been very blessed by family and friends who have provided meals for us.  I'm pretty sure we have enough food to last us a couple of weeks.   But I thought I'd still share what I'd planned to make this week, just in case you wanted to try out a recipe or two. Menu Planning Help

Yesterday I posted my monthly menu plan.  I menu plan because it saves me time, money and a lot of stress!  I used to spend all day worrying about what I was going to make for dinner.  But I know that for a lot of people, menu planning itself can cause a lot of stress, too! It can be hard to try and sit down on one day and figure out what's for dinner all week (or month!) long. I was really happy to find Food on the Table meal planning service.  Food on the Table is an easy meal planning service that is based on sales at local grocery stores.  I was pleasantly surprised to see that Whole Foods is one of the stores available to make my grocery list! After you pick your stores, you choose foods you eat (meat, vegetarian, etc) and then how you like to cook (slow cooker, casseroles, etc).  There is also a section to indicate dietary restrictions. Hooray for a finished menu for the MONTH!  It went together fairly quickly and with out anyone getting hurt.  I really liked having a monthly plan for March.  We didn't stick to it exactly, but it was such a relief to know that I had a plan in place when and if I needed one.   Plus, I didn't dread making the menu every week. It was all done and ready to go. I just had to make sure I had all the ingredients I needed. Planning for Passover

My husband was raised Jewish and we like to incorporate Judaism and his family traditions in to our Christian home. Notice I said,  we like to, because we don't always get around to it. This year Passover, which commemorates the deliverance of the Jews out of Egypt,  will begin at sundown on Friday, April 6th.   This day is also Good Friday and since we're already in celebration mode, I'm planning a Seder to observe Passover. The primary way Passover is celebrated is through the Seder, a communal meal shared by family and friends.  A Haggadah, a "script" of the story of Exodus, is used to guide this symbolic meal.   We use the Haggadah from Martha Zimmerman's Celebrating Biblical Feasts: In Your Home or Church.  Aside from being shorter than the traditional Jewish Haggadah (which can last for 3-4 hours) this one also incorporates a Christian perspective of Passover. I'll be sitting down this week to plan another monthly menu plan for April.  I also need to get my act together and figure out what we're having for Easter.  I kept thinking I had plenty of time and now, I don't. I went to the NASCAR race today with my dad.  I kinda have a thing for really loud, really powerful cars.  I root for Matt Kenseth (only because he's #17 and that's "our" number) and he was so close to winning today but Jimmie Johnson always gets in the way.  (Are you non-NASCAR people still here....?) The race was at noon so I figured we'd get home no later than 5 and I could go get my grocery list organized and go shopping.  But that's not exactly what happened. The race got over around 3, it took us AN HOUR to get to our car, and another TWO HOURS to get out of the parking lot.  Thankfully, I have a month long menu planned out so it turns out I am all ready to go for this week!
